These are definitely my fav’ bliss ball – something about the lemon and cashew combo make them oh-so-good. Perfect snack.
¾ cup medjool dates (pips out)
½ cup raw cashews
½ cup raw almonds
½ cup coconut
Juice and zest of 1 organic lemon
1. Pour ingredients into blender or thermomix. Blend until finely ground.
2. Roll into balls. (If too dry add a little water, or if too wet add more nuts.)
3. Roll in coconut and pop in the fridge.
