Granola

Perfect to enjoy with a cuppa & the Sunday papers. I suggest making 2 x batches to share & enjoy during the week ahead. (Thanks Lorna Jane.)

Preheat oven to 200ºC. Spread tray with baking paper.

Combine:

  • 3/4 cup quinoa flakes
  • 3/4 cup rolled oats
  • 1/2 cup sunflower seed kernels
  • 1/2 cup pepitas
  • 1/2 cup almond kernels
  • 1/2 cup hazelnuts (or your choice)
  • 1/2 cup flaked coconut
  • 1/2 tspn cinnamon

Combine:

  • 1/4 cup pure maple syrup with
  • 1 tbs coconut oil

then mix in.

Bake, stirring often, until lightly browned – total cooking time of 15 mins or so. Remove & add 1/3 cup goji berries. Cool in tray, stirring often.

Serve up & enjoy. (I’m happy with almond milk, spoonful of greek yoghurt & a few fresh blueberries. It’s filling, so see how you go with 1/3-1/2 cup.)
