Tomato salsa: blend diced tomatoes & chopped coriander
Mango salsa: blend diced mango, juice of 1 lime & chopped mint
Guacamole: blend 2 mashed avocados, 1/2 diced red onion, 1/2 cup chopped coriander, juice of 1/2 lime & 1/2 lemon.
Serve with pan-fried white fish in butter or coconut oil, season with salt & pepper.
