Ami, my 10 year old, made this awesome guacamole. Just add vegie sticks – perfect for lunchboxes, afternoon tea & snacks. Keep your eye out for cheap avos.
You’ll need
- 1 large ripe tomato
- 3 very ripe avocados
- Juice of 1 large lime
- Handful coriander, leaves and stalks chopped, plus a few leaves to serve
- 1 small red onion, finely chopped
- Optional: 1 chilli, deseeded and finely chopped
Use a large knife to pulverise the tomato to a pulp on a board, then tip into a bowl. Halve and stone the avocados (saving a stone) and scoop the avocado into the bowl. Tip all the other ingredients in, then season with salt and pepper. Use a whisk to roughly mash everything together. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover and chill until needed. Scatter with extra coriander. YUM!
