After an alternative to rice? This is a perfect side dish – especially with chicken or fish.
You’ll need (serves 4):
1 head cauliflower, cut into florets
2 tbsp olive or virgin organic coconut oil
1 leek, thinly sliced
1 clove garlic, crushed
2 tsp mild curry powder
1 tsp cajun spice mix
1 tsp tumeric
1/2 tsp ground cinnamon
1 tsp celtic sea salt
ground pepper
1/4 cup chopped walnuts
1/4 cup chopped parsley leaves
Process the cauliflower florets until they reach a rice-like consistency, about 20 seconds depending on your machine.
Heat the olive oil in a large non-stick frying pan over a medium heat.
Add the leak and garlic, and cook for 3-4 minutes.
Add the cauliflower, spices and seasoning and cook for a further 5 minutes or until lightly golden.
Scatter the cauliflower with walnuts and parsley to serve.
