I know this sounds like a pretty crazy combo, but when on a cleanse one will try anything different! And we liked it : ) It’s actually a great breakky alternative that’s high in protein and antioxidants plus sweet & savoury – all at the same time.
Dairy free/sugar free/gluten free
You’ll need (serves 1):
2 eggs
1 tbspn almond meal
1 tspn stevia powder
1/2 cup mixed berries
2 tbspn natural yoghurt (or Coyo for non-dairy)
1 tbspn coconut
1 tspn coconut oil
2 tbpsns sunflower and pumpkin seeds
Pinch of cinnamon (to serve)
Whisk in a bowl the eggs, almond meal, stevia, a few berries (not all), 1 tbspn of the yoghurt and a little bit of the coconut.
Melt the coconut oil in a pan on med heat. Pour the mixture and allow to cook until it bubbles or the edges brown. Then flip and cook for another 1-2 mins. (I cooked with a lid over it too.)
Place on a plate and fill with remaining yoghurt, berries, coconut, seeds and sprinkle with cinnamon. Enjoy!
