Lunchbox-friendly, high protein. With only 6 ingredients, these are simple, tasty and perfect for the kids to whip up! Free of nuts, dairy & gluten.
5 eggs
2 very, very ripe bananas (otherwise the muffins aren’t sweet enough)
¼ cup coconut oil, melted (or butter)
½ cup coconut flour
1 tsp baking soda
1 tsp vanilla
1 tsp cinnamon (optional)
Milk of choice (small amount to thin may be needed)
Preheat oven to 200 C
Put all ingredients in medium sized bowl
Mix until smooth and well incorporated
If batter is too thick, add a little bit of milk to thin, but don’t let it get runny.
Put into greased muffin tins. (Feel free to pop a few blueberries in each muffin – yum!)
Bake for 13-18 minutes, until lightly browned and set in middle.
