Lorna Jane’s Chicken Sang Choy Bow

Super-tasty dinner (that’s also easy, high in protein & perfect for leftovers)…..a great one for kids to make their own & get a tiny bit messy!

 

Recipe for 2 serves

1 tbs sesame oil
1 small brown onion, sliced thinly
400g minced chicken (cleanse option: only fresh mince without preservatives)
2 crushed cloves of garlic
1 med carrot, grated coarsely
1 med zucchini, grated coarsely
1 cup finely shredded wombok cabbage
2 tbs tamari (gluten free soy sauce)
1 tbs fish sauce
1 tsp finely grated lime rind
2 tbs lime juice
Baby cos lettuce leaves
1/3 cup fresh coriander leaves
1/4 cup coarsely chopped unsalted cashews

Heat the oil and stir fry the onion until soft, around 2 mins. Add chicken & garlic. Then stir fry until chicken is browned, around 5 mins. Break up any lumps.

Add carrot, zucchini, wombok, tamari & fish sauce. Stir fry until heated. Remove from heat and stir in rind and juice.

Spoon chicken mix into the leaves, sprinkle with nuts & coriander. Enjoy!

P.S: Leftovers make a great lunch, can serve on brown rice too.
